Fastpa at Heidi (Wall) Burns, Mankato, Minnesota -- So the verenika at the Winkler Co-op (and the strawberries and the farmer's sausage) were great as always. Winkler scores again though with Funk's Bakery. Funk's Bakery actually makes and sells zweiback (translation: Tweibach), and a cool adaptation called the einback (zwei- or twei- means double, ein- means single), rollkucken (translation roderkucken or rullkoca), a form of stretzel, and about anything you want. The rhubarb sauce is from the garden.
So Grandma Ethel's rule of thumb was that tweibach meant the double rolls and zweibach was when you made thin slices of tweibach and toasted them (or twice baked them) in the oven to make hard crackers to go with soup or coffee.
