    The Mennonite Heritage Village Museum which preserves the history of the Manitoba's Mennonites in Steinbach, retaining both the rich heritage of the Prussian and Russian migrations, and the contributions of these industrious and faithful folk to Canada, celebrated Canada Day (01 July) in style with traditional Mennonite waffles, tractor rides, political stumping and all the joys of life in the new land.

Preparing Rullkuchen / rodercoca

Jakob (JD) & Susie Wall's Mennonite Waffles ...

2 cups flour                             2 egg whites
4 teaspoons baking powder      4 Tablespoons melted shortening
1/2 teaspoon salt                     1 3/4 cups milk
2 egg yolks

  Sift flour, baking powder and salt together.  Add egg yolks and milk, and beat thoroughly.  Add shortening, mix in beaten egg whites.  Bake in hot waffle iron until brown.  Serve hot with butter and sauce, maple syrup or preserves.


Mennonite Waffle Sauce ....

1 cup milk                               1 1/2 Tablespoons cornstarch or flour
1/3 cup sugar                           1/2 teaspoon vanilla

    Heat the milk slightly over medium low heat, stirring constantly (do not boil!).  Add sugar and stir until dissolved.  Pour cornstarch or flour into a bowl or cup, moisten with warm milk and stir or whisk until dissolved.  Return the cornstarch mixture to the warm milk and stir until thickened.  (Again, do not boil!).  Serve over hot waffles with fruit or jam and bacon or sausage.


Bill & Eunice Wiens' Maple Syrup ...

1 cup white sugar                             1 cup water
1 cup brown sugar                            1 - 2 teaspoons maple flavoring
1 cup light corn syrup

    Combine and boil 5 minutes.  Add flavoring.  Yields 3 cups.
